This short video which aired on the TV show “How It’s Made” will give you an overview on how we shape and flavor our seaweed based caviar pearls.
Kelp Caviar is made using the same ideas and concepts as one can find in a molecular gastronomy kitchen, but on a massive and industrial scale. The basis is the same; any product containing alginate (the compound found on algae leaves) coming in contact with calcium will coagulate or as known in molecular gastronomy and will undergo the process of spherification.
